I’ve wanted to really expand my flavors of
cupcakes and I did just that recently!
I found a simple recipe on Pinterest for
Meatloaf Cupcakes! Yes you heard right, and these are dinner cupcakes with
Mashed potato “frosting” and a cherry tomato on top! I modified the recipe by experimenting
a bit:
I did tomato sauce instead of tomato juice. I
did just garlic pepper for the seasoning. I then bacon-wrapped the “cupcakes”(on
the sides and on top). After baking to internal temp of 165, we turned the oven
to broil, and set the “cupcakes” in a metal baking pan to crisp the bacon!
After slightly cooling, I put ketchup on top and after we topped them, I added
a ketchup drizzle! I'm also showing you different topping ideas...
The results were a hit! I can’t wait to make
them again! The next dinner cupcake will be………
Chicken Pot Pie Cupcakes!!
