Homemade White Champagne Kupacakes

Awhile back I made some white champagne cupcakes for my first wedding order. The recipe the bride and I found was honestly amazing. But it was (I don’t like saying that I do this) a box mix. I prefer homemade recipes. So recently, I went on a search for one of this particular flavor; success!!

This recipe is very basic and has no milk (unless you use real butter), water or oil. The champagne makes up for that; and serious beating to egg whites! They rose nicely and have that yummy spongy texture you want in a cupcake!

Also, the frosting is a homemade champagne frosting (I added almond flavoring). Then I topped it with a almond bark heart design and some white non-perils!

They are super delicious and I can’t wait to give some to my friend who’s birthday is tomorrow!

Meatloaf Cupcakes for Dinner? Yes please!

I’ve wanted to really expand my flavors of cupcakes and I did just that recently!
I found a simple recipe on Pinterest for Meatloaf Cupcakes! Yes you heard right, and these are dinner cupcakes with Mashed potato “frosting” and a cherry tomato on top! I modified the recipe by experimenting a bit:

I did tomato sauce instead of tomato juice. I did just garlic pepper for the seasoning. I then bacon-wrapped the “cupcakes”(on the sides and on top). After baking to internal temp of 165, we turned the oven to broil, and set the “cupcakes” in a metal baking pan to crisp the bacon! After slightly cooling, I put ketchup on top and after we topped them, I added a ketchup drizzle! I'm also showing you different topping ideas...

The results were a hit! I can’t wait to make them again! The next dinner cupcake will be………

Chicken Pot Pie Cupcakes!!

Butterfly Cupcakes

I’ve wanted to do these for awhile and when a request came up I was more than willing to create butterfly cupcakes!

The flavor was Banana Cream with a whipped purple swirl and The purple almond bark/frosting butterflies! The wings were challenging and I created the pattern in the wings using a toothpick; but even that took some skill and patience.

They turned out amazing and I would like to create another batch with a color variety! Any Requests?

Flowers and Nursing themed

I received an order for 2 dozen cupcakes and the design be flowers and nursing themed. It was for a birthday and the person was also going to nursing school. I created the old-fashioned nursing hats out of almond bark and red licorice, did the stethoscope and scrubs with frosting.

For the flowers, I found the design from my “What’s New Cupcake?” book. The designs are jelly beans, runts, marshmellows, and pretzel sticks for the stems!
The flavor was: Cinnamon Roll. This flavor is very popular right now!

Water Lily Flower Cupcakes

A friend requested some cupcakes: chocolate and I pick the design. I wanted them to be flowers because I saw a new technique from my latest book I received! The flowers are water lilies and you create the petals with White almond bark using plastic spoons! Now, I had to make quite a few petals but they turned out amazing! My friend loved them too!

April Fool's Day "Dinner" Cupcakes

The Spaghetti one is my favorite!

So for this year’s April Fool’s, we decided to make “dinner”. We created the following: Chinese Dinner, Spaghetti, and T. V. Dinner. The cupcake flavors were cinnamon roll and chocolate.

Chinese Dinner-puffed rice cereal for rice, tootsie fruit roll for broccoli, skittles and color appropriate tootsie rolls for the carrots, and eggs. The fortune cookies are caramel squares melted and shaped.

Spaghetti- Colored frosting pasta, All-natural strawberry jam sauce and Hazelnut balls for the meatballs. Also, I made white chocolate parmesan cheese.

T. V. Dinner- 2 cupcakes iced and rolled in corn flake crumbs with almond bark bone for the chicken. I did chocolate cupcake for the brownie. Cut up starburst and skittles for the peas and carrots. And the mashed potatoes are mounted frosting with starburst butter and warmed up butterscotch gravy.

These were successful but time consuming…however, I really enjoyed making them!

Manic Monday

I'm sad to announce that the cake decorating classes were cancelled for this month to to lack of people attending. I will keep you posted if they start back up next month. Happy Monday....
